1. Measurements
(Makes 1 mug cake. Total 8 mug cakes can be made from one pack)

Supergrain Vanilla
1/4 Cup TDC Pancake Mix Vanilla
3 Tbsp Cup Milk
2 Tbsp Butter
1 Tbsp Sugar
Optional: 1 tbsp blueberries or chocolate chips

1/4 Cup TDC Pancake Mix Pro
3Tbsp Cup Milk
2 Tbsp Butter
1 Tbsp sugar
Optional: 1 Tbsp blueberries or chocolate chips

Supergrain Chocolate
1/4Cup TDC Pancake Mix Chocolate
3 Tbsp Milk
2 Tbsp Butter
Optional 1/2 Tbsp sugar
Optional 1 Tbsp chocolate chips

* 1 cup = ~234 ml, 1 Tbsp =~15ml
2. Cooking Instructions
Step 1:
In a microwave safe mug (250 ml) whisk together all the ingredients till well combined to get a thick batter. Do not over-mix.
Step 2:
Microwave on regular settings for 1.5 minutes (plus or minus 10 seconds). One way to know if the mug cake is ready is that the batter should be almost doubled.
Step 3:
Serve warm as it is or with your choice of toppings.
3. Serving Suggestions
We like our TDC mug cakes as they are for a 4 pm snack with some Chai or coffee. However, sometimes a dust of powdered sugar or chocolate spread with walnuts, cashews and raisins also taste great and makes for a yummy school snack. The TDC mug cakes go very well with your favorite ice-cream!

4. Substitutions and Additions

Butter substitute: you can use oil or ghee instead of butter, same quantity.

Dairy substitute: replace milk, yogurt, and butter with plant based milk, plant based yogurt, and oil or water, lemon juice / vinegar, and oil in same proportions.

Additions: Feel free to add fruits / flavors / sugar / choco chips to the batter in Step 2. This mix has no added sugar. If you prefer your pancakes sweet then add sugar or berries to the batter in Step 2.

Can I make the mug cake with eggs?
May be. We have not tried making mug cake with eggs. If you do, then please share your recipe with us on instagram @thedancingchef.me or write to hello@thedancingchef.me
Why are my mug cake crumbly?
If you keep the mug cakes for a long time after baking then they will dry out and become crumbly. Add a tsp of butter and oil mixture to the mug cake and microwave for 15-20 seconds. Soft and spongy mug cakes are ready again. Eat warm.

How long can I store the mug cakes?
We do not use any preservatives so the mug cake can stay well for a day in fridge. Follow reheat instructions from the previous question to enjoy the quick and delicious mug cakes
